Week 7 Results, Week 8 Challenges

We are down to the final week!!!!!!!!! (hear the collective sigh...or is that cheering I hear??)

As for the challenges this week, there is only one: Pick any of the challenges from the last 7 weeks BUT, you can pick as many of them as you want (as long as you get your minimum of 4 workouts in as well). For example, I could do the water challenge, the fruits and vegetables challenge, the no tv challenge, and the jumping jacks. That would be 4 bonus challenges totalling 8 bonus points, PLUS my 4 workout points. Get it? Have at it- go crazy- challenge yourself! :)

  1. Instead of Super Size Me this time, how about "Forks over Knives", "Food Inc.", "The Future of Food" or "Food Matters" (All are available on instant play via Netflix, I think you can also rent them on iTunes.) Does watching this negate the no TV challenge?

  3. Jalapeno Black Bean Dip

    (Looking for a delicious way to get more plant based protein? This recipe was a huge hit!)

    Ingredients:
    1 (15 ounce) can black beans, rinsed and drained
    1/2 teaspoon ground cumin
    1/3 cup mayonnaise (not Miracle Whip, I used vegan)
    1/4 teaspoon chopped garlic
    1 -2 tablespoon chopped jalapeno
    1 1/2 cups monterey jack cheese, shredded (and divided)
    finely diced tomato (optional)

    Directions:
    1 Mix all ingredients, but just 1 cup of shredded cheese.
    2 Transfer to oven-proof dish and top with remaining 1/2 cup cheese.
    3 Bake uncovered at 350 degrees F for 15 minutes or until bubbly.
    4 Serve with your choice of chips.

  4. Kombucha

    (I have been wanting to make this super good for you, full of good bacteria for digestion, probiotic drink forever! I finally did it and it is as good as the expensive store bought stuff..hooray!)

    Ingredients (to make one gallon-size brew)
    1. Kombucha Mushroom
    2. 2 cups of "starter tea" from the previous kombucha tea brew.
    3. 5-6 tea bags
    4. one cup (200-300grams) sugar (the yeast eats it)
    5. 3 Quarts of fresh pure water

    Directions:
    1. Boil Water
    2. Add tea and sugar
    3. Let cool
    4. Add two cups "starter tea"
    5. Add mushroom
    6. Cover with cloth and rubber band
    7. Let sit for 7-10 days in warm dark spot
    8. Bottle and add flavor as desired... Enjoy!
